Any leaks and wet zones are to be rinsed off the surface.

After rinsing off any visible soiling, squeegee any pooled water that is accumulated in any depressions on the van floor. Then, spray the entire interior compartment of the truck with a sanitizing solution, and make sure you cover the entire compartment’s interior surface. Any loading equipment used in the truck must be sprayed too, including the pallet truck, and especially its wheels. At the end, spray the rubber seal of the rear end door and the head of the squeegee that’s used as well. Then shut the truck doors closed, and put a colored tag on it. The colored tag would indicate that the truck has been rinsed and sanitized. Therefore, before carrying any unpacked raw food such as meat and poultry, the sanitizer will have to be rinsed out before loading.

Rinsing the whole truck inside and out is a good practice that doesn’t let bacteria form its colonies in any stagnant moist zones. Use a heavy-duty cleaner to rinse ceilings, walls, floors, even the catch tray and drain trap in the refrigeration unit, so that no bio-films form in these overlooked places.
