Refrigeration is an indispensible part of our life, and is arguably more important to frozen food transporters. This gives the truckers a lot of breathing space, because the immediate consequence of anything that went wrong with the truck wouldn’t be food spoilage.

Food quality and food safety is primarily dependent on maintaining the temperature of the cabin that matches the right storage temperature of a particular food item. Any fluctuations in temperature can result in decreased food quality. Ice cream is one very commonly transported frozen food item. Thawing the ice cream, then freezing it and thawing it again can cause ice crystals to form which changes the texture and even taste of the ice cream. For food trucks, another management hurdle that they have to handle is maintaining a uniform consistency in the workers operation. Their day to day operations must be as efficient and swift as possible to optimize the output of the food truck, which happens to be the reason we don’t have to wait too long in food truck lines. The integration of refrigeration and transportation has reaped economical and financial benefits that were previously untapped. A mobile refrigerator on wheels means transporters of food items and other such perishable goods, including pharmaceuticals and even horticultural products, do not have to worry about the limited shelf life of their products during transportation; they can now prevent spoilage of the goods through a constantly controlled temperature system set up within a truck. Ever wondered how this cooling system actually works though?

The mobile refrigeration system creates a cold temperature by removing heat from the inside of the truck, expelling it outside. In order to remove heat energy, the compartment itself must have a self-contained atmosphere. A self-contained compartment means no heat enters it from the external atmosphere. High-density polymer foams are used for insulation of the compartment, coupled with a seal around the door. This makes the compartment heat-tight. After the compartment is self-contained, the next step is to remove as much heat from the inside as possible. This calls for the actual refrigeration part of the system and it has a relatively simple mechanism of action.

3 components are involved in the refrigeration system, namely: condenser, compressor, and an evaporator. The condenser consists of a long, convoluted metal pipe. A coolant fluid is run through the convoluted pipe in order to absorb heat. Coolants, by definition, are solutions that are very good at absorbing heat. Coolants used in refrigeration are synthesized in a lab to be exceptionally efficient at absorbing heat. Metals are a good conductor of heat and the convoluted metal pipe can, therefore, efficiently conduct the heat from the compartment to the coolant fluid, which absorbs it and turns into a gas.

After the fluid converts into a gaseous state, it is carried to the condenser. The aptly named condenser then condenses the gaseous coolant. The gaseous coolant is compressed, placing it under high pressure. Due to the compression of the gas in high temperature, the sparsely spaced gas molecules of the coolant are brought closer together, resulting in condensation.

Once the coolant is compressed into a pressure similar to that of an average aerosol spray, the condensed coolant is then introduced into the evaporator. The mechanism of the evaporator allows air from the external atmosphere to be run through the high-pressured condensed coolant, cooling it back into a gaseous state and expelling the heat outside. The gas is then reintroduced into the condenser for the cycle to run again. As this mechanism occurs over and over again, it expels more heat energy from the inside of the van to the outside with every cycle, making the interior van compartment temperature lower and lower.

This is the fundamental principle through which the van’s refrigeration Trucks system operates, without going into details. However, there are other intricate mechanisms that are involved like the very important temperature regulation system. The cleaning must be quick, easy, frequent and thorough, in order to be implemented before or after each freight, without skipping. Here’s how you can do it.

First, thoroughly rinse all the surfaces that the carried goods have come into contact with. Start from the front and work to the rear end door. If the goods like fish and meat were stacked, start from the highest point on the wall that it could have touched and work towards the floor. Any leaks and wet zones are to be rinsed off the surface.

After rinsing off any visible soiling, squeegee any pooled water that is accumulated in any depressions on the van floor. Then, spray the entire interior compartment of the truck with a sanitizing solution, and make sure you cover the entire compartment’s interior surface. Any loading equipment used in the truck must be sprayed too, including the pallet truck, and especially its wheels. At the end, spray the rubber seal of the rear end door and the head of the squeegee that’s used as well. Then shut the truck doors closed, and put a colored tag on it. The colored tag would indicate that the truck has been rinsed and sanitized. Therefore, before carrying any unpacked raw food such as meat and poultry, the sanitizer will have to be rinsed out before loading.

Rinsing the whole truck inside and out is a good practice that doesn’t let bacteria form its colonies in any stagnant moist zones. Use a heavy-duty cleaner to rinse ceilings, walls, floors, even the catch tray and drain trap in the refrigeration unit, so that no bio-films form in these overlooked places. Make sure that the sanitizing chemicals you use do not deteriorate the rubber door seal because it is responsible for sealing the refrigerated internal atmosphere.
